This happens even if you play and go outside your ranch for too long.

I dont know why it happens, but they dont fly or sort when I am there, there is nothing that disturbs them.

Every danger is far from them, so I ask if it is bug or it is intentionally added system so chicken may get out.

Do you have High Walls on your coops?
Sometimes I may be blunt, but it's for your own good.

Nope, it is very rarely to happens and they never fly infront of my eyes.

It happens only if I am very long outside my ranch or I load my save.

Also the coops are switching alot or what, I seen the numbers of chicken in my 2 coops different.

They switched as numbers.

If you don't have the Grass upgrade, the chickens are going to get hungry and try to jump out. If I were you, I would buy both the Grass and the High walls upgrades on all my coops. And don't forget that chickens are going to escape if there is more than 3 Roostros and/or 12 Hens in the same coop.
